MOV was born from a simple yet powerful intuition: to create a place where flavour, research, and conviviality come together.
Federico envisioned something more than a bistrot, more than a delicatessen, more than a laboratory. He wanted to create a concept capable of expressing a different way of experiencing food: authentic, contemporary, and experiential.
Meeting Andrea proved to be a turning point. One vision merged with the other’s sensitivity and expertise. Together, they transformed an idea into a tangible journey made of study, experimentation, challenges, and discoveries.
Everything began in the laboratory, the creative heart of the project. It was there that the first recipes, preparations, and products were developed: from Vinegré, which has become the brand’s signature creation, to the dishes served in the bistrot and the offerings of the gastronomia.
Today, MOV is an ecosystem of experiences, carrying the same philosophy through different expressions.
